Seems to me like a basic AI portfolio wouldn't be a bad idea for a young person entering the workforce, perhaps even regardless of the industry they are pursuing.
Something simple like "I built a tool chain using x/y/z, fed it this RAG data related to the project requirements, and produced that output." Showing that they understand how to properly use the tools, I can do something relevant and useful with it.
